WHere is an easy interpretation of a drink from the seasonal drinks list. It's a large-volume prepared mix which is packed with essence associated with holiday season, rendering it ideal for hosting a holiday party. Reserve the remaining citrus syrup to use in breakfast cocktails, sweets, or to mix additional servings of bikinis.
Bikini
Serves 10 servings
To make the Clementine Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Drink (yields 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Directions
Making the Cordial: Combine all the ingredients inside a pan, bring to a light boil, mixing until the sugar dissolves. Next, remove from the burner allowing it to cool fully. Pour into an sterilised bottle, seal and store in the fridge, it can be stored for about one month.
Preparing the Cocktail Base: Mix every liquid ingredients into one big jug, let it rest for one hour, then strain preferably using muslin, so it's completely strained.
When ready to serve: Add 85ml of the premix to a stirring glass filled with ice, and stir lightly for a minute to cool it down. Filter into an cold coupe glass or a similar vessel, top with some cranberries and finish by giving it a quick spritz of mandarin oil above the glass.
